This style of salad has always been a go to recipe for me. I used to make it with quinoa, feta, tomatoes, cucumber and parsley. This time I had a bag of couscous kicking around so I thought I’d give it a try! Honestly, I can’t choose which version I like better, this kind of salad is always fresh and delicious. Feel free to switch couscous for quinoa or anything else you’d like. Use any variation of herbs such as dill, cilantro or parsley (parsley is the most popular), as well as a combo of feta, chic peas, cucumbers, chopped tomatoes, or cherry tomatoes – really, anything your little heart desires! Combine it all together with the dressing and, voila! You have a fresh delicious salad!

Here’s the recipe I used this time.

Couscous Tabbouleh

Middle Eastern inspired couscous salad with fresh herbs

|     Prep Time: 10 minutes     |     Cook Time: 1 hour     |     Total Time: 1 hour 10 minutes     |

Serves 6


1 cup uncooked couscous
½ cucumber
2 tomatoes
2 tbsp lemon juice
2 tbsp olive oil
½ cup chopped cilantro (use parsley instead if you have it)
¼ cup chopped dill
¼ tsp black pepper
½ tsp salt


Step 1: Cook couscous according to directions on the package, then put it in the fridge to chill (about 1 hour).

Step 2: Chop the cucumber, tomatoes, and herbs.

Step 3: In a small bowl combine the lemon juice, olive oil, black pepper, and salt.

Step 4: When couscous has chilled, combine all ingredients in a large bowl. Let sit for a least 5 minutes to allow the flavours to combine.

Have a little taste test before serving, and then you’re done!
