Sautéed Spinach and Garlic Chicken Pasta

I made this pasta because I had a huge bag of spinach sitting around that I really wanted to use up before it went to waste. This bag of spinach was so big that having spinach salad for a few nights in a row, and making a spinach salad for 7, still left almost half the bag untouched! To use up that amount of spinach, I realized, required cooking. So, I found a few recipes that suggested having spinach in pasta, and voila, I made this by pulling together some ingredients I had laying around the house. I’m pretty proud of myself for making this pasta so please let me know what you think if you decide to make it 🙂. Anyway, this is a super simple pasta with a healthy kick that can be whipped up in no time by using simple ingredients that you probably already have in your kitchen.

Sautéed Spinach and Garlic Chicken Pasta

Easy pasta with spinach and chicken and covered in a creamy white sauce.

Serves 4



Ingredients:

For the chicken and pasta:
½ package of penne (or any other pasta)
2 chicken breasts
4 cloves of garlic
oil for cooking
salt and pepper (for seasoning)
4 cups of baby spinach (or 2 cups frozen spinach)

For the sauce:
1.5 cups of milk
1.5 tbsp flour
3 triangles of laughing cow cheese (substitute 3 tbsp of any creamed cheese you like here)
2 tbsp parmesan cheese
¼ tsp salt
⅛ tsp pepper

Directions:

Step 1: Boil pasta according to package instructions. While pasta is cooking combine all of the ingredients for the sauce in a medium saucepan and simmer on medium heat, stirring every few minutes until the sauce thickens (about 10 minutes).

Step 2: While the sauce and pasta cook, cut the chicken breast into cubes and chop the garlic. Heat up a small amount of oil in a frying pan on medium heat, then add the chicken, garlic and a good amount of salt and pepper. Cook until chicken is fully cooked and lightly browned.

Step 3: Add the spinach to the chicken, and sauté until the spinach is cooked (about one minute), then remove from heat.

Step 4: When the pasta is cooked, drain the water, but save 1 cup of it. Take this cup of water and pour it into the milk mixture, stirring gently. Let the pasta sauce cook for 10 minutes more, or until the sauce is thickened again (taste it and add more salt, pepper or cheese to taste). While the sauce is cooking, toss the pasta with a small bit of oil and add the chicken and sautéed spinach to it, then cover and set aside. When your sauce has thickened, pour it over your pasta, and mix it all together.

Step 5: Snap a quick picture of your beautiful colourful creation and dig in!
