Perfect Breakfast: Eggs, Veggies & Toast

Woot woot! I’m enjoying the beautiful weather so so much!! I started the day with an early morning grocery shop. To most people that probably sounds awful, but honestly I enjoyed it so much haha. I love getting dressed up cute and popping out to do errands :). Then I grabbed some coffee and head home to blog and study!

Alright, let’s just get right down to business.

Todays post is a super simple¬†easy breakfast! All you have to do is make eggs, make toast, then toss on some spinach and tomatoes. Voila! …alright, I won’t be lazy, I’ll give you some steps ūüôā

The Perfect Breakfast: Eggs, Veggies & Toast

Simple recipe for an open faced breakfast sandwich with egg, tomato, and spinach.

|      Prep Time: 5 minutes      |      Cook Time: 10 minutes      |      Total Time: 15 minutes      |

Serves 2


4 eggs
4 slices of bread
1 tomato (sliced)
1 cup spinach

salt & pepper (to taste)


Step 1: Cook 4 eggs however you like. Hard-boiled or poached is the best for this. I made poached, and used a special pot with cute little spots for each egg. :p

Step 2: While your eggs are cooking, grab your spinach and toss it in a frying pan with a pinch of salt. Cook until spinach has wilted. 

Step 3: Toast the bread, butter it, and place it on a plate. Top each slice with 1/4 of the cooked spinach and one slice of tomato. When your eggs are ready, put them on top of your veggies, top ’em with a little salt and pepper, ¬†and you’re done!¬†

Step 4: Eat!!
