Luxurious Blueberry Coconut Smoothie Bowl

I finally did it! I’ve been saying for a while that I NEED to try making a smoothie bowl. I even posted a roundup a little while ago of a bunch of delicious Smoothie Bowl Breakfast Ideas to get inspired (take a look, they all look mouth watering). And finally I made one (actually 3!) & wow, I have to say I’m really impressed.

Whoever came up with this idea is a genius! If you’ve never heard of them before, it’s because they’re relatively new. They’re like, the IT thing on Instagram right now with all the foodies & hip young people ;). Pretty much, it’s like, cold sweet breakfast soup? Haha that makes it sound terrible, but it’s actually awesome.

Here’s the simple way to put it: It’s a smoothie, in a bowl, with toppings, that you eat with a spoon!

So I was REALLY excited to finally do this, but I had about a million different ideas for different smoothie bowls. I seriously couldn’t choose. Luckily my hubby & his brother were here so I made one for each of them, and one for myself! So, I grabbed all the different things from my kitchen that seemed like they’d be good for toppings, paired them off, and chose a smoothie to match! I feel like that’s probably the opposite of what most people do, but I’l be honest, I was focused more on making a beautiful smoothie bowl & taking gorgeous pictures of it, than I was on making the perfect, most delicious one ;). But they all turned out wonderfully delicious & gorgeous, so I’d say it was a win.

 


Here are a few tips:

Tip 1: Make sure whatever kind of smoothie you choose to make, you make sure it’s thick. If it’s too watery the toppings will sink in, and it will be hard to eat it with a spoon. And your pictures won’t be as pretty – that’s tragic to me 🙁

Tip 2: EAT IT WITH A SPOON. I know. Your body will tell you it’s weird. You DRINK smoothies. But listen, just eat it with a spoon, mmm yes.


 

But, okay, let’s be honest. Your smoothie bowl will be delicious no matter what. If you want to ignore all of my super thoughtful instructions & go wild & make a liquid smoothie bowl AND drink it with a spoon (you animal), I’m pretty sure you’ll love it anyway. I think it seems kind of impossible to go wrong with these.

If you want to make your own creation, simply choose a smoothie that you love and add whatever delicious toppings that sound good to you. Luxurious Blueberry Coconut
Smoothie Bowl

The perfect recipe for a blueberry, coconut, banana smoothie bowl.

Serves 1-2



Ingredients

For the smoothie:
1/2 cup blueberries
1 banana
2 tbsp unsweetened coconut flakes
1 cup milk
1 scoop vanilla protein powder
2-4 ice cubes

Toppings
coconut flakes
pecans, broken into pieces
chia seeds
1/2 banana, sliced

For the drizzle (optional)
plain yogurt (or your flavour preference)
honey

Directions

Step 1: Toss all your ingredients into a blender & blend until smooth.

Step 2: Pour into a bowl. Add the selection of toppings onto the smoothie, be creative, make it pretty!

Step 3 (optional): Dip a spoon into your yogurt and (wow this is impossible to explain) wiggle your hand back and forth over the smoothie bowl so that the yogurt spaces onto the smoothie, it will be a bit messy at first, but you’ll get the hang of it. Drizzle honey on top as well, and you’re set!
