Healthy Chocolate Cupcakes

Today I finished my last exam for the semester, so, to celebrate I did some baking! I searched around for something relatively healthy to bake until I finally came across this. Here is my version of the Healthy Chocolate Cupcake, with a special secret ingredient…spinach! I was nervous to add spinach, I thought it might give the food a strange texture, but it didn’t at all! It simply added moisture in a super healthy way. I think I will be adding spinach to more of my baking, so long as I’m using chocolate – I’m not sure sure green vanilla cupcakes would be that pretty! So next time you want to make some kind of chocolate cake/cupcake, give these a try – trust me, they are delicious!

Healthy Chocolate Cupcakes

A simple moist chocolate cupcake with a healthy ingredient, spinach.

|      Prep Time: 10 minutes      |      Cook Time: 15 minutes      |      Total Time: 25 minutes      |

Yields 12 cupcakes


1½ cups all purpose flour
1 tsp baking soda
¼ cup cocoa powder
1 cup white sugar
½ tsp salt
1 tsp lemon juice
¼ cup canola oil
1 tsp vanilla extract
1 cup water
⅓ cup finely minced/pureed spinach


Step 1: Preheat oven to 350 degrees and insert cupcake liners into a 12 cup muffin tray.

Step 2: In a large bowl add the flour, baking soda, cocoa powder, sugar, salt, and stir until combined.

Step 3: In a medium bowl combine the lemon juice, canola oil, vanilla, water and spinach. Add to the flour mixture, stirring until just combined.

Step 4: Fill your pre-lined trays ¾ full with batter and bake for 15 minutes.

Step 5: Remove from oven and let cool (about 20 minutes) then cover with the frosting of your choice (I used a store-bought cream cheese frosting).
