Fresh & Healthy Breakfast


Hello hello! I’m always making breakfast with eggs, and I’m always looking for something quick and easy to make. This breakfast is perfect for both of those. I love the mix of fresh ingredients so so much. Have you ever heard that for some people cilantro tastes like soap? Apparently it just works that way and affects their palette in such a way that it actually taste bitter like soap. I think that’s so sad honestly, I love love the fresh taste of cilantro – so much so that I often munch on it alone when it’s available. Does cilantro taste like soap to you? If it does, boo 🙁 that sucks, I’m sorry for you. Speaking of eating herbs, did you know that when I was a teenager my family had a huge bush of mint growing on our property. Well, it was in the most ideal location, directly beside the path that you would have to take when leaving the house. So every time, almost without fail, that I would leave the house I would grab a bunch of mint and chew on it! It wasn’t for the minty freshness though (I swear it wasn’t a substitute for teeth brushing!) I actually just enjoyed the taste so much! I have another confession to make… I also ate flowers as a kid… yes, colourful pretty, not usually considered food, flowers. Well, thank you for listening, I’m glad I could confide in you! Just as some background, I grew up in a small hippie town (waaay north, in the Yukon) so I’ve always been and will always be a hippie at <3.

Alright, enough about my bug-like grungy hippie habits, here’s that recipe you came for 😉

Fresh & Healthy Breakfast

Easy recipe for an open faced breakfast sandwich with egg and tomato.

|      Prep Time: 10 minutes      |      Cook Time: 10 minutes      |      Total Time: 20 minutes      |

Serves 2


2 eggs
2 slices of bread
½ tomato
fresh cilantro (to taste)
salt & pepper (to taste)


Step 1: Place your eggs in a pot of water and bring to a slow boil – so the eggs don’t crack. Add a pinch of salt. Let them boil for one minute, then turn off the heat and let the eggs sit for 10 minutes. 

Step 2: Drain the boiled water out of the pot and replace with cold water, drain the water again and add cold water (this time the water will stay cool). Soak the eggs in cool water for 5 minutes (this makes them easier to peel). 

Step 3: Toast the bread and place it on a plate. Chop the tomato and cilantro. Once the eggs have cooled, peel, slice, and place them on the toast. Place the chopped tomato on top and sprinkle with chopped cilantro, salt and pepper, to taste. 

Step 4: Eat!!

And there you have it, a fresh healthy breakfast. Not to mention it’s super filling! Enjoy 🙂
